- Turmeric Powder
- Rhizomes lifted Jan–Mar in Erode, Sangli and Nizamabad; cured, dried and milled through spring.
- Turmeric Finger / Bulb (Dried)
- Dried fingers and bulbs come to market from March; Lakadong (Meghalaya) slightly later.
- Dry Red Chilli (Whole)
- Guntur and Byadgi harvest Dec–Mar; cold-store stock carries the rest of the year.
- Chilli Powder (Ground)
- Milled from the new crop from February; colour is best on fresh-season material.
- Cumin Seeds
- Gujarat and Rajasthan cumin is a rabi crop harvested Feb–Mar; new-crop bookings open in March.
- Coriander Seeds
- Rajasthan, MP and Gujarat coriander harvests Feb–Mar.
- Ginger Powder (Ground)
- Dry ginger from the Dec–Feb harvest; milled Jan–Apr.
- Dehydrated Onion Powder
- Mahuva’s dehydration season runs Feb–Jun on the rabi white-onion crop.
